“Homemade” Tortilla Chips and Beans

  • 1 corn tortilla*
  • 1/2 cup Amy’s Refried Black Beans-Low Sodium
  • Palmful of cherry tomatoes
  • Fat free greek yogurt (optional)

Use a pizza cutter and divide the tortilla into 8 slices.  Spread them out on a plate and microwave for 1 min.  Turn each piece over and microwave for 1 min. more.  Let cool for 2 min.  Warm the beans and serve with the chips and tomatoes.  Add a dollop of yogurt as a garnish.  A  clean, crunchy Mexican fix!

*Tortillas vary in size and thickness, so be sure to watch carefully the first time you microwave them, because it’s easy to burn them.  Of course they won’t brown, but be sure to let them rest the last two minutes to get that good crunch.
