As with the rest of my meals, this one is easy. I’ll file it under “recipes” for simplicity’s sake, but I use the term loosely, and it’s really just a bunch of stuff thrown together. My husband prefers to mix the elements all together, and we both like to add a little Tabasco sauce. No it ain’t sexy, but the combo of flavors is pretty tasty. The kid likes it too!
- 1 lb. extra lean ground turkey
- salt, pepper, garlic powder
- 1 can black-eyed peas
- tomatoes – fresh or canned
- Tabasco sauce (optional)
Brown the turkey meat and season with salt, pepper, and garlic powder. Heat the black-eyed peas. Either slice or warm the tomatoes (if canned) and serve. You can also dish this up cold, along with some greens, as a little summer salad. I usually have enough left over for at least 2 more individual meals. Enjoy!
