Antipasto Bowl (repost from Sept.)

Happy 4th everyone!  I posted this recipe last summer, and thought today would be the perfect day to mention it again.  Not only is this side tasty, but because of all the contrasting colors it’s also really beautiful.  I usually serve it in a white bowl for the ultimate WOW factor.  If you’re looking for a yummy, yet healthy alternative to the predictable potato preparations this holiday, then put your cutting board to use and get this into the fridge ASAP – it needs a few hours to marinate!

This is a wonderful and unique salad that I’ve made for years, and often gets requested.   I prepared it again today for a party and thought I’d share the recipe.  I follow the recipe to the letter for events, but leave the cheese out if it’s just for my family.  It’s not simple due to the amount of ingredients, but it’s easy to put together, and deliciously worth your time!
